Purposes of encryption/security:

Encryption: encrypts the message so that only the recipients can decrypt the message. Thus if a message is intercepted, it can't be read.
Signing: you can "digitally sign" your message, which means that your encryption/security program puts code in the message such that the person at the other end can verify that you were the person who actually composed and sent the message.
With PGP or S/MIME packages, you can choose to encrypt, sign, or do both (or neither).
